Ingredients
Basmati rice 1 kg
Mix veg 1 kg
oil 200 gm
onion 3
Ginger garlic paste 1 tbs
Turmeric 1/2 tsp
salt to taste
Red chillie powder 2 tsp
coriander powder 1 tsp
Curd 250 gm
Garam masala powder 1/4 tsp
coriander leaves
mint leaves
2 lemons
slit green chillies 5
Clarified butter( ghee) 3 tsp
Method.
Heat oil in a vessel add slice onions fry till golden in colour.Take out 3/4 onions keep aside add ginger garlic paste fry well add turmaric,salt red chillie powder mix well add vegetables add coriander powder mix well cover the lid cook on low flame for 10 minutes.Now add Curd cook till oil separates now add powder garam masala green chillies and fried onions veg masala is ready.Now boil water in a thick bottom vessel add whole garam masala,coriander leaves mint leaves salt to taste when water boils add soaked rice cook to 80% drain the water. In the same vessel add half rice add coriander leaves mint leaves fried onions add Vegetable masala add remaining rice add coriandet leaves,mint leaves lemon juice ghee cover the lid cook on low flame for 15 minutes.Mix veg Biryani is ready.
